Maple Walnut Chickpea Blondies

Blondies. They are brownies, minus the chocolate. If you haven’t had the pleasure of trying one, let me introduce you. But, these are more than just brownie’s sister snack. These have major health benefits being

  • high in fiber
  • gluten-free
  • plant-based protein
  • high in iron
  • delicious

The variations are endless, too. Some add chocolate chips, nuts and seeds, oats, swirls of homemade chocolate. I would love to hear what you might come up with!

Maple Walnut Chickpea Blondies

  • 1 can garbanzo beans, drained and rinsed

  • 1/2 C almond butter

  • 1/3 C maple syrup

  • 1/4 tsp baking soda

  • 1 egg

  • 1/4 tsp baking powder

  • pinch of sea salt

  • 1 tsp vanilla extract

  • 1/4 C walnut pieces


  • Preheat oven to 350F
  • Add all ingredients (except walnuts) to a blender or food
  • processor and puree until smooth and creamy
  • Pour batter into an 8×8 baking pan, lined with parchement paper
  • Sprinkle batter with walnuts
  • Bake for 20-25 minutes and allow to cool before slicing into 9 or more squares
