Healthy Carrot Cake Bliss Bites

As far as I’m concerned, you cannot have too many bliss ball recipes. The possibilities are endless when it comes to ingredients, there is no cooking involved, and they make the perfect inbetween-meals-snack.

These carrot cake bites have all the spices that you would expect from a carrot cake, plus the fibre from all the carrots and nuts. I sometimes add in raisins because I’m one of those carrot cake people.

Ingredients:

1 C rolled oats

3/4 C carrots, grated (2 large carrots)

1/2 C almond butter

1/4 tsp ground cloves

1 tsp cinnamon

1/4 tsp nutmeg

5 dates, pitted and chopped

1/4 C shredded coconut, plus more for rolling

3/4 C cashews

1/4 C hemp heart seeds

2 Tbsp honey

1/4 C raisins (optional)

Method:

Pulse oats and cashews in a food processor or blender until fine. Transfer mixture to a bowl and add spices plus the rest of the ingredients. Get in there with your hands and mix well until a firm dough forms. Chill in the fridge to allow the dough to firm up, then roll into bite-sized balls. Feel free to roll some in shredded coconut.
