Fruit, Nut & Seed Power Balls

Can there be too many bliss ball recipes to try? I don’t think so! They’re my favourite healthy snack, always packed with all the healthy fats and just enough sweetness to bring me back from the mid-day slump.

Bliss balls, or power balls, or protein bites…are always on my weekly meal plan list. They do not involve cooking, the combinations of ingredients is endless, and they freeze well.

Here is my latest bliss ball recipe. They are naturally sweetended with honey and dates, are packed with plant-based fiber and protein from chia seeds, pecans and almond butter. You need one or two to give you that little burst of energy or tie you over between meals.

In a big bowl, combine:
1 C almond butter
1 Tbsp coconut flour
3/4 C chopped pecans
2 Tbsp chia seeds
1/2 C chopped pitted dates
2 Tbsp honey
1/4 tsp sea salt
1/4 C shredded coconut
1/2 C rolled oats
1 Tbsp dark cacao nibs

optional additions: matcha powder, cacao powder, maca powder, ground flax seeds

Get in there with your hands and mix well. Refrigerate for 30 mins to allow the chia seeds to soak up some of the delicious fat from the almond butter, then roll into 24 balls. Keep cool until ready to serve.
